Welcome! I’m glad you stopped by.

Back in the days of yore (ha), we kept this site updated pretty well. Those were the pre-cancer days.

We lived as vegans, reveled in our great health, were enthusiastic about our fabulous food plan.

That was then.

After a big-time surgery where around 2/3 of my colon was removed, living a high-fiber vegan diet became impossible. I tried everything to get back to my old (fabulous) lifestyle.

But… then things began to change. Slowly but surely my mindset concerning diet shifted. After long discussions with the local dietitian, our eating plan evolved enough to better match the American Heart Association’s guidelines.

We’re not completely vegan anymore. However, with our local doc’s help, we’ve weaved a solid Ornish protocol into our food plan and today my dear husband is still rocking his post-heart attack blood numbers.

(Ornish is still ranked #1 by US News and World Report as of 2019. Yee-ha!)

Needless to say, we’re tickled pink at the thought of resuming our healthy lifestyle with incredible food.

Also, I’m looking to regain my health after my own bout with the big C. I plan on sharing my progress on this blog…

Ah, but let’s talk food, eh?

If you’re expecting gourmet and complex recipes, you’re about to be disappointed.

However, if you’re looking for healthy, heart supporting, fast meals, you’ve come to the right place.

PlantBasedChefs is a work in progress so expect changes, snafus, typos, and imperfection all around.

But you can also expect enthusiasm, love of life, and occasional kitty pics.

I hope you visit often! After all… who has time to cook all day?
